Allulose Side Effects: What the Human Research Actually Shows (2026)

Allulose side effects are almost entirely digestive: gas, bloating, abdominal cramping, and loose stools. In a human dose-escalation trial, healthy adults tolerated up to 0.4g per kg of body weight in a single sitting without severe symptoms. Severe diarrhea appeared once the dose reached 0.5g per kg.
Allulose shows up in about half the low-sugar products on the shelf now, and the questions in my inbox have shifted. People stopped asking what it is. They started asking what it does to them.
Fair question. Here's what the human research actually shows, what it doesn't cover yet, and where the numbers sit.

What are the side effects of allulose?
The reported side effects of allulose in human studies are gastrointestinal. That's the whole list:
- Gas and abdominal distention
- Abdominal pain or cramping
- Loose stools or diarrhea
- Nausea, at high intakes
- Headache and loss of appetite, at very high intakes
In the 2018 dose-escalation trial published in Nutrients, healthy young adults reported significantly higher rates of diarrhea (p = 0.004), abdominal distention (p = 0.039), and abdominal pain (p = 0.031) after allulose compared with a sugar control.1
That sounds alarming until you look at the doses. Those symptoms clustered at the top of an escalation ladder that climbed to 1.0g per kg of body weight per day. For a 150 lb adult that's about 61g of allulose in one day, which is roughly 8 Ozzi sticks' worth.
Every side effect on the list is a dose problem, not an ingredient problem.
How much allulose is too much?
The 2018 trial is still the best answer anyone has. Researchers walked healthy adults up in steps of 0.1g per kg of body weight and watched for symptoms.
They found no severe diarrhea or GI symptoms up to 0.4g per kg in a single dose. At 0.5g per kg, severe diarrhea appeared. Pushing total daily intake to 1.0g per kg produced severe nausea, abdominal pain, headache, anorexia, and diarrhea.1
Their recommendation: cap single doses at 0.4g per kg and total daily intake at 0.9g per kg. Translated into pounds and grams:

Two caveats on those numbers. The trial was non-randomized, and the abstract doesn't report how many people took part. Take it as a useful guardrail, not gospel.

Why does allulose cause gas and bloating?
Allulose is the C-3 epimer of fructose, which is a chemist's way of saying it's fructose with one carbon flipped. Your body recognizes the shape enough to absorb a good chunk of it, and not enough to burn it for fuel. It carries about 0.4 calories per gram and roughly 70% of sugar's sweetness.2
Whatever your small intestine doesn't absorb keeps traveling. In the colon, unabsorbed sugars do two things: they pull water into the gut by osmosis, and they get fermented by resident bacteria, which produces gas.
Water plus gas is the entire mechanism behind the symptom list. It's the same reason a large dose of any sugar alcohol sends people to the bathroom. The difference is where each one's threshold sits, which is why allulose generally sits easier than erythritol or maltitol at comparable sweetness. Does allulose affect blood sugar or insulin?
Two human randomized trials have looked at this, and both point the same direction.
In a 2023 randomized, double-blind crossover trial in 18 healthy adults, a 25g dose of allulose produced lower glucose than plain water (p = 0.001). Insulin also came in lower on the standard analysis, but the authors ran Bayesian models as well, and those showed no insulin difference. Worth knowing before anyone quotes the insulin result as settled.3
A 2024 trial in 30 healthy Thai volunteers added 0, 2.5, 5, 7.5, or 10g of allulose to a 50g sucrose drink across five weekly visits. Peak post-meal glucose and insulin both dropped in a dose-dependent way. The 120-minute trough, the reactive dip that often triggers the next round of cravings, came up as allulose went up.4

Is allulose safe long term?
Honest answer: the short-term human safety record looks clean, and nobody has run the long-term study.
The FDA granted allulose GRAS status and allows it to be excluded from total and added sugars on the Nutrition Facts panel.2 That's a meaningful regulatory bar in the US.
Europe went the other way. In June 2025, the EFSA panel concluded that "the safety of the NF, i.e. D-allulose, cannot be established."5 Read the reasoning before you panic, though. The panel flagged gaps in the dossier on identity, production process, use levels, genotoxicity, and human data, and noted that "despite being contacted several times, the applicant did not reply to EFSA's requests for additional data."
That's a paperwork failure by the company that filed, not a finding of harm. It still means allulose stays unauthorized in the EU, and it still means the human file is thinner than the marketing suggests.

The 2023 trial also checked blood lipids, uric acid, and hsCRP after a 25g dose and found no effect on any of them.3 Useful, because it's the closest thing to a metabolic-harm check anyone has run.
One more thing worth flagging. Most of the exciting allulose headlines about appetite and GLP-1 trace back to a 2018 mouse paper in Nature Communications, which showed allulose triggering GLP-1 release and vagal signaling in rodents.6 That's a rodent finding with a rodent mechanism. No human study has measured GLP-1 after allulose. Anyone selling you the human version of that story is ahead of the evidence. Who should be careful with allulose?
People with IBS or a reactive gut. If lactose, sorbitol, or a big bowl of beans gives you trouble, your threshold for allulose is likely lower than the trial average. Start small.
Anyone stacking multiple allulose products. This is the one that catches people. An allulose-sweetened creamer, an allulose protein bar, an allulose syrup on pancakes, and a supplement will stack toward the ceiling fast. The trial limits are for total intake, not per product.
Kids. The one pediatric trial tested 2.5g and 4.3g doses. Only one child across both arms hit a Bristol type 6 or 7 stool, and all adverse events were mild or moderate with none serious.7 Reassuring at those doses. Nobody has tested adult-sized doses in children.
Pregnancy and breastfeeding. No human data. Ask your doctor.

Does allulose cause diarrhea?
At high doses, yes. In the 2018 human trial, severe diarrhea showed up at 0.5g per kg of body weight in a single dose, about 34g for a 150 lb adult. Below 0.4g per kg, healthy adults reported no severe symptoms.

The trial authors recommend a maximum of 0.9g per kg of body weight daily. That's roughly 49g at 120 lb, 61g at 150 lb, and 82g at 200 lb.
Does allulose cause bloating?
It can. Abdominal distention was significantly more common after allulose than after a sugar control in the 2018 trial. The unabsorbed fraction gets fermented in the colon, and fermentation makes gas.
Is allulose bad for your gut?
No human study has shown gut harm at normal intakes. The 2023 trial found no change in hsCRP, a general inflammation marker, after a 25g dose. Studies claiming gut benefits from allulose have been done in mice, and mouse gut findings don't transfer cleanly to people.
Does allulose spike blood sugar?
No. Two human randomized trials found glucose either unchanged or lower after allulose, including when it was added to a 50g sugar drink.
Can you build a tolerance to allulose?
Anecdotally people report their gut adapts over a couple of weeks, which matches how other fermentable carbs behave. No human study has tested it, so treat that as a reasonable guess rather than a fact.
Is allulose safe during pregnancy?
There's no human pregnancy data on allulose either way. That's a conversation for your doctor, not a blog post.
Is allulose banned in Europe?
It isn't authorized there. EFSA's 2025 opinion said safety "cannot be established" because the applicant stopped responding to requests for data, not because the panel found evidence of harm. Different situation from a ban on safety grounds.
